Overview:
Mirazur, the acclaimed three-Michelin-starred restaurant from Menton, France, staged a three-week residency at Sydney’s Pier One as part of its global Beyond Borders project. Led by chef Mauro Colagreco, the team created menus themed around flowers, roots, fruit, and leaves — celebrating Australian produce with artistry, creativity, and a strong commitment to sustainability. Ranked the world’s best restaurant in 2019 and now part of The World’s 50 Best “Best of the Best,” Mirazur delivered a once-in-a-lifetime dining experience on Sydney Harbour. To complement the menus, we designed floral centrepieces and large-scale installations that shifted weekly in line with each theme, creating an atmosphere as immersive and evolving as the food itself.
Flowers:
All Australian wildflowers, including Eucalyptus youngiana, Eucalyptus macrocarpa, Eucalyptus caesia, wattle, native grasses, driftwood, roots, ptilotus, seacrest, kangaroo paw, Banksia robur, Banksia serrata, and Hakea victoria.
Colour Palette:
Earthy browns and neutrals.
